Wine growing in Dornbirn

We store red and white wine as part of a wine brotherhood. Stefan Grabher and Harry König also produce their own orange wine as part of their own project.

Orange wine

Together, Stefan Grabher and Harry König have created a small but fine wine concept, which is now being implemented in the cultivation area behind the house. In spring 2024, the two fungus-resistant white wine varieties MUSCARIS and BLÜTENMUSKATELLER were planted there. Some adaptations were made in the cellar and the appropriate equipment was purchased. In addition to the exciting "Orange Wine" project in amphorae, classically matured wines are also vinified in tanks and wooden barrels.

Tonamphore, Kvevri - in Georgian Qvevri

The cradle of viticulture is in Georgia and can be traced back up to 8000 years. Amphorae similar to the Kvevri were found in the Roman Empire, where they were called Dolium, in Greece Pithos and in Spain Tinaja. The word wine probably even originated from the Georgian term ghvino (vin; wine; vine; vino ...) It was only much later that people began to work with wooden vessels.

Test bench measurement

Terms such as "natural wine", "orange wine", "spontaneous fermentation", etc., literally haunt the minds of many wine enthusiasts and are mixed up in a hopeless confusion. There is not enough space here to explain these terms in detail. Several research projects (UNESCO, LWG Veitshöchheim, Fraunhofer Institute IME, ELKANA&Giorgi Barisashvili, etc.) have recently developed various guidelines for natural vinification in the spirit of Georgian tradition.

We take on this exciting task in the deep cellar in compliance with the above-mentioned guidelines, but with the use of modern technology in advance, fermentation in barrels, temperature-controlled maceration, use of a clay amphora made of precisely composed clays to achieve an optimal evaporation rate and the technical equipment of modern cellar technology (closures, drain taps, tasting taps, level indicators, etc.).
